If you have a sweet tooth and a Tik Tok account, chances are you’ve seen these fruit-shaped confections come across your feed. Where did the trend come from? Some trace the origin of the hype back to Salswee Bakery in New York, but these desserts can now be found in cities across the world. Made using French patisserie methods, confectioners employ a trompe l’oeil technique to create hyper-realistic fruit shapes out of marzipan or tempered chocolate.

Lemon Tart

A white chocolate layer surrounds a lemon mousse and lemon curd inside this dewy and detailed three dimensional lemon, complete with a stem. The whole thing sits upon an oat crumble tart base.

Piña Colada Tart

Coconut mousse and coconut praline fill this baby coconut, so hyper-real that the smooth chocolate coating appears rough and fuzzy. Pineapple gelee can be seen peeking out of the top of the dessert, and coconut flakes adorn the tart base underneath.

Pear Tart

This graceful and festive bartlett pear is made with caramel ganache, pear jelly, and pear caramel, which is then covered in white chocolate. It sits on top of a cookie crumble base with caramelized pecans. Airbrushing with sprayable food dye makes it look like the subject of a still life painting.

Raspberry Matcha Tart

Combining two delightful and light flavours, almond raspberry cream, raspberry compote, and white chocolate matcha ganache come together to create this stunning result. It looks like a huge ripe raspberry, complete with dimpled flesh and a vibrant cluster of green leaves.
